Zucchini and Beef-Mince stir fry

Ingredients:

  • 4 oz lean beef (I use 4% fat)
  • 2 blocks zucchini
  • 1 block tomatoes
  • 1 block onion
  • Oregano spice

Preperation:

Speedy cooking; chop up the onions and garlic first, and chuck them in a frying pan. Quickly roll your mince and just add them to the pan as you’re going along. Give the meat a little bit of time to sear. Next up are the tomatoes, which need to be cut quite small for this recipe. Then chop your zucchini into little blocks and toss them in. Add a lot of oregano, leave for 2 or 3 minutes, and you’re done!
